I made this for last month's challenge, but I am just now getting around to posting about it! The best part about a good Taco Soup recipe is that you can pretty much put whatever the heck you want in it! The original recipe I based mine off of was found HERE, but I hardly stayed within the recommendations and used whatever I had on hand!
Here is my ingredient list:
1 lb. extra lean ground beef
1 onion, chopped
3 cans (15.5 oz. each) desired beans, undrained (I used white beans 'cause that's what I had in the pantry!)
1 can (14.5 oz.) tomatoes with peppers (like Ro-Tel)
1 can (14.25 oz.) corn, undrained
1 small can tomato juice (like V-8)
1-1/2 cups KRAFT 2% Milk Shredded Cheddar Cheese
Tortilla Chips
Here is how I made it:
BROWN meat with onions in large saucepan; drain.
ADD all remaining ingredients except cheese; stir.. Bring to boil. Reduce heat to medium-low; simmer 5 min., stirring occasionally.
SERVE in bowls with chips on the bottom, then the soup and then topped with the cheese.
This is a great meal for this time of year!!! Very warm and filling! The only bad thing about this soup is when it spills on your favorite jeans while in transport to a family party. My jeans have a shadow even after 2 washes outlining where this soup spilled in my lap! Darn it!
One of my favorites too,especially in the winter. So easy to throw it together and my kids even love it!
