A little background on this yummy salad...
A couple years ago I went to the baptism of a friend's son. Afterward, they had a small lunch and everyone was ranting and raving over this amazing Tortellini Apple Salad brought by one of the guests. Much to all of our dismay, this particular guest refused to give any of us her recipe- I hate when people do this! After emailing the lady again and again, my friend was able to get her to crack and was given the recipe, but she was sworn to secrecy and to this day refuses to give it out! Again, I hate when people do this!
So this year for Memorial Day, my parents had a BBQ and I was in charge of bringing a salad. Wanting so badly to bring this Tortellini Salad, I called my friend, begged her to break her promise, and when she wouldn't let up, I went to the internet. I found THIS recipe for a Tortellini Apple Salad that is even better than I remember! AND I share my recipes- HA! For all my 2500+ readers, please enjoy!!!
I added walnuts instead of pine nuts (as the original recipe suggests) because it is what I had on hand. I also had a ton of other pasta that I used in a pasta bar for dinner the night before that I wanted to use up- bow tie, shells etc. so I threw that in as well and it added even more texture, which was fantastic. Next time I make it, I will hold off on 1/2 the celery though- it was a bit much, in my opinion. This salad was the hit of the day and I am so glad I have it!

ReplyDeleteThat is funny! Glad you share! That happened to me once and I finally got the recipe. I had to promise not to share it in that area. We moved and now I pass it around freely. I share too!

ReplyDeleteOh my gosh, I totally agree about the recipe sharing thing. It seriously bugs me SO MUCH! I had someone do that with cheesecake so finally I started trying my own recipes and now, after some trial and error, I think mine is better. Too bad I don't work with her anymore to rub it in her face!

Drives me nuts when people do this! Is there anything you could substitute for the corn syrup? Seems weird to put that in a salad, but I'd love to try this.
