Tamale Pie

I have been in the kitchen more than at my craft table lately, can you tell?!

Here is another recipe! This is a very easy, basic yummy version of Tamale Pie (aka "Cornbread Casserole", "Mexican Casserole" or whatever else you have heard!)


Ingredients:

1 pound ground beef
1 can whole kernel corn, undrained (or you can use 2 cups of frozen corn and 1/4 cup of water)
1 jar salsa (14-16 oz)
1/2 cup shredded Cheddar cheese
1 box (about 8.5 ounces) corn muffin mix

Feel free to add whatever else you like- olives, green onions, serve with guacamole, sour cream etc.


Directions:


Heat the oven to 375°F. Cook the beef in a 10-inch skillet over medium-high heat until it's well browned. Stir the corn with liquid, salsa and cheese in the skillet. Pour the beef mixture into a 13 x 9 casserole pan.

Mix the corn muffin mix according to the package directions. Drop the batter by spoonfuls on top of the beef mixture.
Bake for 25-30 minutes or until the topping is golden brown and mixture is bubbling.
