Chicken Pizzaiola
This is just like a chicken parmesan recipe, but instead of baking breasts in the oven, you pan fry cutlets over the stove top. Rob is not a lover of many Italian dishes (blasphemy, I know) but this one never does him wrong. Here is the recipe I made tonight- it only took about 15 minutes from start to finish!
Ingredients:
-Chicken cutlets
- Italian flavored bread crumbs
- Jar of Spaghetti sauce
-Shredded Mozzarella Cheese
- Vegetable Oil
Directions:
1. Pour vegetable oil on bottom of pan. I used about 2 tablespoons. You want enough to coat the entire bottom and then a tad more. Again, I am not a huge fan of fried food so I didn't want the chicken completely covered by oil. Heat the oil on medium-high heat.
2. Meanwhile, roll chicken cutlets in bread crumbs. When oil is hot enough, place them side by side into the pan of oil. (you can tell if the oil is ready by getting your fingers wet in water then flicking them at the pan of oil- if the oil splatters when the water mixes with it, its hot enough. If not, let it get hotter.)
3. Cook chicken for a few minutes on each side until golden brown and not pink in the center.
4. Pour spaghetti sauce over the top (I used about 1/2 the jar) and sprinkle moz. cheese on top of sauce.
5. Cover pan and continue cooking til cheese is melted.
Serve with some steamed veggies and garlic bread and ENJOY!
